I am happy to update that we updated our documentation with a couple of tutorials showing how to integrate Project Prague into your Unity app.

When running the Microsoft.Gestures.Service icon (our setup dropped it on your desktop) a window shows up - in that window's title you can find your current running version.
Let me know if it is not 1.0.17201.3 or newer.
If it is updated, simply plug in your kinect v2 and enjoy

There are a few discrepencies between our current supported scenario (desktop) and a Hololens/VR scenario:
1) The camera point of view - we currently provide a 'user facing' scenario while in Hololens/VR the camera is 'world facing'
2) Our detection process is compiled to a standard PC processor and not generalized to work with propriety hardware
3) We currently support .net framework apps (as can be seen in our samples repo https://aka.ms/gestures/samples ) while Hololens, I believe, requires apps to be UWP
There is a quite simple solution to circumvent these dependencies in the short term till we bridge these gaps:
Run Project Prague one a front facing camera connected to a standard PC and relay gesture registration requests from your UWP app to a proxy app you run on the PC (using websockets or any cross device communication).

We do plan to add support for various depth cameras. That said, please note that the Surface devices do not have a depth camera but rather an active IR.
To use Project Prague we need depth perception.
